Microgreens are the shoots of plants that are harvested after forming their first "true leaves," typically 7-12 days after being sown. This is a true superfood, with one study finding that these little greens contained between 4-40 times the nutrient-density of their full-grown vegetable counterparts!
Not only are they healthy, but they also taste great! Many microgreens share the flavor profile of the vegetables, but with more intensity. Want to spice up a dish? Add some radish microgreens to the mix and experience the extra zest!
So, how do they promote change? Food is tied to empowerment! When people are healthy they are able to engage the world around them in new ways. And not only are microgreens a superfood, but they are also able to be grown almost anywhere! We want to create a microgreen community where we pass on this skill to others, especially communities where nutritious food isn't as readily accessible.
